When I was accepted into the @JSLFoods Udon Noodle Challenge I was not only honored and excited but worried I wouldn’t be able to narrow my selection to only one. Fortunately they have 3 amazing flavors to help to create a delicious dish every time; Chicken Udon, Shoyu, and Vegan Mushroom. I use these and their ramen noodles often and can certainly get behind a product I love easily. I managed to create a dish for each flavor which my family was more than happy to partake in as testers. I’ve been dabbling with White Miso for a little while and though it’s the mildest of flavors, it works very well with the Mushroom Udon noodles for this dish. The recipe came together rather easily without a lot of fuss which is great for the busy lifestyle of today. The great thing about this dish it’s completely Vegan and Vegetarian not to mention extremely healthy and full of umami flavors. The variety of mushrooms not only creates exotic flavor and texture in this soup but is a low calorie, low fat and high protein alternative for Vegetarians and aids in boosting our immune system and metabolism. A win-win all around. I hope you enjoy this soup as much as we did.
Umami definition: One of the five basics tastes, alongside sweet, bitter, salty, and sour. It’s best described as a savory or “meaty” flavor. A pleasant savory taste.
This recipe makes 1 large serving or 2 individual servings using 1 packet of noodles. A meal that’s ready in roughly 20 minutes.
Ingredients:
1 Package Fortune Mushroom Udon Noodles
1/4 Scallions, sliced and reserve 1 Tbs for garnish
1 Tbs Ginger, grated
2-3 Tbs White Miso Paste
1 tsp Sesame Oil plus 1 tsp vegetable oil
3 Cups Water
1/4 Cup thinly sliced carrots
1 cup Bok Choy roughly chopped
3/4 Cup Extra Firm Tofu, Cubed
1-2 Cups Chefs Mix Mushroom Pack or Shitake, Alba Clamshell, Trumpet, Brown Clamshell
Nori Flakes or Furikake Seasoning (combo of sesame seeds and nori) for garnish
1 tsp Tamari or Low Sodium Soy
Instructions:
Heat a medium saucepot on medium-low, add sesame oil and vegetable oil
Add variety of mushrooms to lightly saute for about 2-3 minutes
Add grated ginger, water, sauce packet, miso paste and cubed tofu then bring up to a low boil.
Add scallions, bok choy and carrots
Add Udon Noodles and cook as recommended 3-5 minutes
When serving top with Furikake or sesame seeds, your reserved scallions
